Interesting Holiday Recipie………

With the holiday season coming upon us all thick and fast, a great way to get the kids involved in the kitchen is to come up with some kid friendly, unusual recipes.  Here is one that certainly falls into that category - Candied Sweet Potatoes.  I’m really not too sure about this one and we haven’t tried it here so far, so can’t vouch for its flavor or suitability.  But the whole idea of candy combined with potatoes is enough to give it a go - please let me know if you make it….and if it is a success.

Here’s what you need:

3 sweet potatoes (large)
1 tablespoon vegetable oil
6 teaspoons brown sugar
some small marshmallows
salt and butter to taste

Wash sweet potatoes and pat dry. Slice through the middle (longways), then rub the sweet potato with oil. Lay the sweet potatoes in a casserole dish, sliced side up.

Pre-heat the oven to 350F degrees (180C degrees) and bake for 40 minutes until firm but not completely baked. Top with a little butter, brown sugar, the marshmallows, and salt to taste. Then bake for another 20 minutes.

    It’s delicious! Sweet potatoes were a favorite growing up, and we’ve had them so many ways (including with apples!). This is great if you love your sweet potatoes really sweet. And kids love the marshmallows on top along with all the brown sugar that candies it.
